The Pearl Diver is one of those cocktails you probably have seen on the menu at Polynesian restaurants or in one of Jeff Berry's cocktail books (such as Sippin' Safari) but you just didn't make it because of that damn Gardenia mix. Well, B.G. Reynolds' has produced a version of Don's great mix so now you can unlock the potential of this recipe.

The Pearl Diver
- 1 1/2 oz Aged column-still rum
- 1/2 oz Demerara rum
- 1/2 oz Fresh lime juice
- 1/2 oz Fresh orange juice
- 1/2 oz Don’s Gardenia Mix
- 1 dash Angostura bitters

Garnish: Edible orchid
Garnish: Pineapple leaf

So many great 1930's and 1940's recipes were lost to time because Don Beach hid his recipes from people so they couldn't reproduce them and steal them for competitive restaurants. However, the downside to this is that the recipes wouldn't survive Don Beach's death. However, industrious folks like Jeff Berry come along and do the research, digging, and discovery to understand what these great recipes used to have in them!

Then, you take Jeff's discoveries and hand them to yet another bartender, Blair Reynolds, who takes the recipe ingredients and produces the final result. Now, you can enjoy the classics like the Pearl Diver because these two folks did all the leg work. You, however, just get to drink a tiki recipe that your parents parents probably drank in their early 20's. You get the experience the love, the flavor, and the entertainment of the tiki classics because of the great work of these wonderful bartenders, scientists and historians.

And we...we just bring you the Pearl Diver so it's on the top of your mind for your next tiki cocktail party this summer.

For those history buffs, you'll find the Deep Sea Diver recipe to mimic that of the Pearl Diver, as that was the name for this "stolen" cocktail at the Mai Kai.
