John has annually brewed a basic golden sour beer and then aged them until he had 3, 2, and 1 year vintages. This is for blending Lambic style beers into a Gueuze. This is the second time he's done this for 6 years worth of cultivating and storing souring beer.

We tasted these three beers straight from the carboys. They are uncarbonated and mildly chilled. This was done to assess the character of each one and begin to assess how John would like to create on blend from all three. We pick and choose which ones have characters we'd like to highlight and which characters we'd like to demote with blending. A trick task that isn't always easy.

We discuss differences in aged character, degrees of acidity and oxidation.

Will John endeavor on another three year Gueuze journey from here? Who knows!
